LIME GELATIN SALAD

1 pkg (3-oz) lime gelatin
1 cup boiling water
1/2 cup cold water
1 cup cottage cheese
1 can (15-oz) crushed pineapple, drained
1/2 cup chopped pecans, optional

Dissolve gelatin in boiling water, stirring until completely dissolved. Stir in the col water and chill until partially set. Stir in pineapple and cottage cheese. Stir in the pecans, if using.
Refrigerate until firm.
Yield: 4 servings
