THE VERY BEST SALISBURY STEAK

Several friends have shared this recipe with me saying it is the best. You can judge for yourself.

1 (10 1/2 ounce) cans Campbells French onion soup
1 1/2 lbs ground beef
1/2 cup dry breadcrumbs
1 egg
1/4 teaspoon salt
1/8 teaspoon ground black pepper, to taste
1 tablespoon all-purpose flour
1/4 cup ketchup
1 -3 teaspoon Worcestershire sauce, to taste
1/2 teaspoon mustard powder
1/4 cup water


In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, breadcrumbs, egg, salt and black pepper.
Shape into 6 oval patties.
In a large skillet over medium-high heat, brown both sides of patties.
Pour off excess fat.
.
In a small bowl, blend flour and remaining soup until smooth.
Mix in ketchup, water, Worcestershire sauce and mustard powder.
Pour over meat in skillet.
Cover, and cook for 20 minutes, stirring occasionally.

CHEESY BEEFY BOWTIE PASTA

This is a recipe I saw on another site I belong to. It looked so good I had to try it. Yum! To my diabetic readers, do not worry about the pasta as there is so much protein in this recipe. Use a whole grain or no carb pasts, if you need to. I always use whole-grain pastas. You could also use ground chicken or turkey, if you prefer.

1.5 lbs ground beef
12 oz bowtie (farfalle) pasta
4 tbsp butter, divided
1 small onion, finely diced
7 cloves garlic, minced
1 cup beef broth
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1/2 tsp red pepper flakes
1.5 cups heavy cream
4 oz cream cheese, softened
1.5 cups grated Parmesan
1.5 cups shredded mozzarella, divided
1 cup shredded cheddar
Salt and black pepper to taste
Fresh chopped parsley for garnish
Directions:
1. Cook the bowtie pasta in a large pot of salted boiling water until tender. Reserve a little pasta water, then drain and set aside.
2. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the onion and cook until softened, then stir in the garlic.
3. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Season with salt, black pepper, smoked paprika, garlic powder, onion powder, Italian seasoning, and red pepper flakes.
4. Pour in the beef broth and let it simmer for a few minutes, stirring to combine all the flavors.
5. Reduce the heat to medium and add the remaining butter. Stir in the heavy cream and cream cheese until the sauce is smooth.
6. Gradually add the Parmesan, cheddar, and 1 cup of the mozzarella, stirring until the cheeses melt into a rich, creamy sauce. Add a splash of the reserved pasta water if needed.
7. Fold the cooked bowtie pasta into the skillet until every piece is coated with the cheese sauce.
8. Sprinkle the remaining mozzarella over the top and let it melt before finishing with fresh parsley and an extra sprinkle of Parmesan.

EASY BEEF STROGANOFF

1 lb boneless round steak, 3/4-inch thick
2 tbsp butter, divided
1/2 cup chopped onion
1 can condensed cream of mushroom soup
1/2 tsp paprika
1/2 cup sour cream
Hot cooked noodles for serving
Chopped fresh parsley for garnish
Additional paprika for garnish

Slice the beef across the grain into thin strips.

In a large skillet, over medium-high heat, melt the butter and cook the beef and onion until beef is no longer pink and onion is tender.

Stir the soup and paprika into the beef mixture; heat through while occasionally stirring.  Remove from heat.

Stir in the sour cream.

Serve the stroganoff over the hot noodles.

Garnish by sprinkling with the chopped parsley and a little paprika.

SANTA FE CASSEROLE

1 lb lean ground beef
1 pkg (1.25-oz) Taco seasoning mix
2 cups chicken broth
1/4 cup flour
1 cup sour cream
1 can (7-oz) diced green chiles
1 pkg (11-oz) corn or tortilla chips, your choice
2 cups grated Mexican-Blend cheese
1/2 cup sliced green onions, including tops

Preheat oven to 375 degrees.
Lightly grease a 13 x 9-inch baking dish.

In a medium skillet over medium-high heat, brown the ground beef, stirring to crumble; drain well.  Add the taco seasoning mix, stir until well blended.

In a small bowl combine the broth and flour until smooth; add to the beef mixture and bring to a boil.  Cook until slightly thickened. 

Stir the sour cream and chiles into the mixture blending well.

Place 1/2 of the chips in the prepared baking dish.  Top with half the beef mixture and half the cheese. Repeat layers with the remaining ingredients, ending with the green onions.

Bake casserole uncovered at 375 degrees for 20 minutes.  Allow to stand for 5 minutes before serving.

CUBE STEAK HAYSTACKS

This is a recipe I got from Betty Crocker in 1971.

1 package hash browns with onions, cooked according to package directions

2 tablespoons shortening, melted in a large skillet.

6 beef cubed steaks, cook in the melted shortening for 3 to 5 minutes per side over medium heat; remove from skillet.  Sprinkle with 1/2 teaspoon salt to season.

Spread 2 teaspoons catsup over the top of each steak.

Top each steak with 1/2 cup of the prepared hash brown potatoes and top each with 1 tablespoon shredded cheddar cheese.

Return the skillet to the heat, cover and cook over low heat for a couple of minutes until cheese melts.
Yield: 6 servings

MEATBALLS IN BROWN GRAVY

1 lb lean ground beef
1 egg, slightly beaten
1/4 cup Panko crumbs
1 tbsp canola oil
2 cans (10.5-oz each) brown gravy
hot cooked rice for serving

In a medium bowl combine the ground beef, egg, and Panko crumbs mixing together well.  Form mixture into 16 meatballs.

In a 10-inch nonstick skillet over medium heat, heat the oil. Add meatballs and cook until browned on all sides.  Drain well.  Add the gravy and simmer on low for 20 minutes stirring occasionally.  Serve over the hot cooked rice.

CRESCENT BURGERS

One of my facebook friends sent me this recipe and it sounds so good I thought I would share it with you.

1 lb hamburger meat
2 cups shredded cheddar cheese
couple drop of Worcestershire sauce
1 pkt dry onion soup mix
1 roll of crescent rolls
1 tsp pepper

Preheat oven to 350*
Brown and drain hamburger. In medium bowl mix hamburger and rest of ingredients (reserve 1/4 cup cheese for tops). Add a HEAPING spoonful of meat mixture to large end of unrolled crescent roll. Roll up and seal edges as best you can. Sprinkle reserved cheese on top and bake for 15 minutes til golden brown.

FOCACCIA ROAST BEEF SANDWICHES

1 cup mayonnaise
1 cup sour cream
2 tsp dill weed
1 tsp onion powder
1 round (8-inch) focaccia bread
fresh lettuce leaves
tomato slices
3/4 lb deli sliced roast beef

Mix the mayonnaise, sour cream, dill, and onion powder together in a small bowl.

Cut the focaccia bread into 4 pieces; split for sandwiches.  Spread the dressing on the cut pieces of  focaccia.  Add lettuce leaves and tomato slices.  Top with the roast beef and add the top slice of the bread to make a sandwich.

Yield: 4 sandwiches

NOTE:  Don't like focaccia bread?  Use Kaiser rolls or onion rolls instead.

SLOW COOKER SHORT RIBS

Note: I am posting this as a quick recipe even though it cooks for 9 hours in a slow cooker. It only takes minutes to assemble so the preparation is quick and the meal it is ready when you get home.

2/3 cup flour
1 1/2 tsp salt
1/2 tsp black pepper
4 to 4 1/2 lbs boneless beef short ribs
1/4 cup butter
1 large yellow onion, diced
1 1/2 cups beef broth
3/4 cup cider vinegar
3/4 cup packed brown sugar
1/2 cup chili sauce
1/3 cup catsup
1/3 cup Worcestershire sauce
5 garlic cloves, minced
1 1/2 tsp chili powder

In a 1-gallon size zip-top plastic bag, combine the flour, salt, and pepper; add ribs in batches and shake to coat well.

In a large skillet, brown the ribs in the butter then transfer to a 5-quart slow cooker or crockpot. In the same skillet, combine the remaining ingredients. Cook, stirring, until mixture comes to a boil. Pour the mixture over the ribs.

Cover the ribs and cook on low heat for 9 hours or until the meat is tender.

Yield: about 12 servings.

BARBECUE GROUND BEEF MIXTURE FOR A CROWD OR TO FREEZE

4 lbs ground beef
1 cup chopped onion
1 bottle (14-oz) catsup
1 cup water
1/2 cup finely chopped celery
1/4 cup lemon juice
2 tbsp brown sugar
1 tbsp salt
1 tbsp Worcestershire sauce
1/2 tsp dry mustard

Place the ground beef in a large skillet with the chopped onion.  Cook the mixture until the meat is brown and crumbly and the onion is tender.  Pour into a large colander and drain mixture well.  Return to the skillet and add the remaining ingredients. 

Bring the mixture just to bubbling, reduce heat to low and simmer for a half hour.  If serving a crowd, place mixture on buns and set out an assortment of toppings.

Can be placed into pint or quart size zip-top freezer bags and frozen for a quick meal later.  If you freeze, label bags with contents and date before freezing.  To thaw place in the refrigerator overnight or all day to thaw and heat on low to medium heat in a saucepan.

Yield: 5 pints

OPEN-FACED GROUND BEEF PHILLIES

1 lb lean ground beef (no fatter than 80/20!)
1 med-size green bell pepper, cut into 1/2-inch strips
1 med-size red bell pepper, cut into 1/2-inch strips
1 small onion, cut into thin wedges
1/2 cup low-sugar creamy Italian salad dressing
1 loaf (12-inches long) whole-grain French or Italian bread, halved lengthwise
4 slices thinly sliced Provolone cheese, quartered

In a medium to large skillet, crumble and cook the ground beef with the bell peppers and onion. Cook until the beef is completely browned, stirring occasionally; drain well.

Stir half of the salad dressing into the beef mixture. Spread other half of dressing on the cut sides of the bread.

Place both halves of the bread, cut sides up, on an ungreased cookie sheet; broil 4 to 6-inches from the heat for 3 to 5 minutes until lightly toasted. Remove from broiler.

Evenly divide the beef/peppers mixture between the two halves of bread and spread to cover. Top with the cheese pieces and return to the broiler for 2 to 3 minutes until cheese is melted.

Cut each half of the bread into 2 pieces to serve 4.

SAUCY STEAKS WITH ONION

3 tsp canola oil, divided
1 lb thick cut boneless sirloin
1 cup thin sliced onions
1 cup picante sauce

Cut the steak into 4 serving pieces.

Heat half the canola oil in a large nonstick skillet; add steak and brown well on both sides.  Remove steak from the skillet and drain off any fat.

Add the remaining canola oil to the skillet and add the onions.  Cook until the onions are tender, stirring occasionally.  Stir in the picante sauce.

Return the steak to the skillet and lower heat to medium.  Cook an additional 2 minutes for medium steak or longer for well done.

To serve, place steak pieces on serving plates and top with onions and sauce.

RUSSIAN-STYLE BEEF STROGANOFF

This recipe is one I got from Sarah at Curious Cuisine. I love beef stroganoff and this is a good recipe that does not use canned soup. Give it a try. Yum!

  • 2 Tbsp salted butter, divided
  • 8 oz button mushrooms, sliced
  • 1 onion, thinly sliced
  • 1 lb sirloin steak, sliced thinly, against the grain
  • 2 Tbsp unbleached all-purpose flour*
  • 1 c beef broth (we prefer low sodium)
  • ½ tsp ground mustard seed or 1 Tbsp whole grain mustard
  • 1 Tbsp tomato paste
  • ½ lb egg noodles, dry
  • ½ c sour cream
  • ½ tsp salt
  • ¼ tsp ground black pepper
*I always use white whole-wheat flour for my health purposes.

In a large skillet, heat 1 Tbsp of butter. Sauté the mushrooms in the butter over medium high heat for 2 minutes. Remove the mushrooms from the pan and set aside.

Add the remaining 1 Tbsp butter to the pan and heat until melted. Add the onions to the butter and sauté for 1-2 minutes. 

Toss the beef chunks with the flour and add them to the saute pan. Cook until browned, 2-3 minutes.

Add the beef broth, mustard powder, and tomato paste to the saute pan along with the cooked mushrooms, scraping the bottom of the pan to pick up any stuck bits.

Simmer the mixture over medium heat for 10-15 minutes, until the beef is cooked to your liking.

Place the sour cream into a small bowl and mix a little of the broth from the skillet with the sour cream to warm it. Pour the warmed sour cream mixture into the saucepan and mix to combine.

Taste and add the salt and pepper, to taste.

Serve the stroganoff alongside of potatoes, rice, or noodles, of your choosing.

LEMON-BROCCOLI CHICKEN

1 lemon
1 tbsp canola oil
4 (approx 1 lb total) boneless skinless chicken breast halves
1 can (10 3/4)-oz) cream of broccoli soup (I suggest using low-fat soup)
1/4 cup milk
dash of freshly ground black pepper

Cut 4 thin slices from the lemon; set aside.  Squeeze 2 teaspoons of juice from the remaining lemon; set aside.

In a large skillet over medium-high heat, heat the oil to hot.  Add chicken and cook 10 minutes or until browned on both sides.  Skim off any fat.

In a bowl, combine the broccoli soup and the milk; stir in the lemon juice and the black pepper.  Pour soup mixture over the chicken.  Top chicken with the lemon slices.

Reduce the heat to low and cover; cook 5 minutes or until the chicken is completely cooked through; stir occasionally.

To serve, garnish with some carrots curls, fresh herbs, etc as desired.

BARBECUE BEEF PIZZA

1 (12-inch) pizza crust
1 pkg (12-oz) shredded Cheddar cheese
1 lb cooked shredded barbecued beef
4 slices red onion, separated into rings

Preheat oven to 400 degrees.

Place the crust on an ungreased pizza pan; sprinkle 1 cup of the cheese over crust.

Evenly spread beef over the cheese; lay the onion rings over the beef.

Sprinkle the 2 remaining cups of cheese over the beef and onion. 

Bake pizza at 400 degrees for 15 to 20 minutes or until lightly browned and heated through.

BEEF AND VEGETABLE STIR-FRY

4 cups fresh stir-fry vegetables

1 lb beef sirloin stick, stliced thin

2 tbsp toasted sesame oil

1/4 cup low-sodium teriyaki sauce

2 garlic cloves, minced

Toasted sesame seeds for garnish, optional

Fit a steamer basket or a large metal colander into a large pot. Fill bottom of pot with water, making sure it doesn't touch bottom of basket. Over medium-low heat, bring water to a simmer. Add vegetables to the basket and steam until crisp-tender, turning once, about 5 minutes. Remove the vegetables and set aside. 

Sprinkle beef with 1/4 tsp salt and 14 tsp of pepper. In a skillet, heat sesame oil over high heat. In batches, cook beef, stirring, until browned, about 1 to 2 minutes. Return all beef to skillet and add the vegetables, teriyaki sauce and garlic. Cook, stirring, until heated through and liquid is thicken, about 2 minutes. If desired, sprinkle with sesame seeds before serving.

TACO MEATLOAF

TACO MEAT LOAF 

(An Ameri-Tex-Mex Fusion)

1 pound of LEAN ground beef (less than 10% fat)
½ cup of finely crushed corn chips
1 beaten egg
3 teaspoons chili powder
1 teaspoon cumin
½ cup of (your favorite) thick and chunky salsa
½ teaspoon black pepper
½ cup of Mexican blend shredded cheese

TOPPING
1 cup of refried beans
¼ cup of your favorite salsa
1 cup of Mexican blend shredded cheese

In a bowl, mix the ground beef, corn chips, egg, chili powder, cumin, salsa, black pepper and ½ cup of shredded cheese. Mix thoroughly and form into an oval on the baking sheet (not in a loaf pan).
In a small bowl, mix the refried beans with ¼ cup of salsa and frost the top of the uncooked meatloaf with it. Bake at 375° for 45 minutes. The last few minutes of baking time, sprinkle the top of the meatloaf with one cup of shredded cheese and return to oven.

SPICY CAJUN SALSA BURGERS

1/2 cup salsa

1 tsp Creole seasoning

1/2 tsp garlic powder

1/2 tsp crushed red pepper flakes 

1/2 tsp pepper

1 lb ground beef

4 kaiser rolls, split and toasted

In a large bowl, combine the first five ingredients. Add the beef; mix lightly but thoroughly. Shape into four 1/2-inch-thick patties.

Grill patties, covered, over medium heat or broil 4-inches from heat 4-5 minutes on each side or until a thermometer reads 160-degrees. Serve on the rolls with your choice of condiments.

CHEESEBURGER WITH TOMATOES & GREEN CHILIES

1 1/2 lb lean ground beef

6 slices your favorite cheese
6 multi-grain buns, toasted if desired
1 can (10-oz) diced tomatoes & green chilies, drained

Shape beef into 6 patties.

Grill 7 to 9 minutes per side or until done to 160 degrees.  Top with cheese slices and continue to grill until cheese starts to melt.

Place burgers on bottom half of buns and top with the tomatoes & chilies then the top half of the buns.
NOTE: Burgers can be cooked in a skillet on the stovetop on medium heat until done as above.  Continue as directed above.

PIZZA MEATBALLS

This is an old clipping I have had for several years.
