PAULA DEEN'S QUICK AND EASY CHICKEN POT PIE

2 (10 3/4-ounce) cans cream of chicken soup
1 cup sour cream
1/2 cup milk
1/2 teaspoon dried parsley flakes
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 (1-pound) package frozen mixed vegetables, thawed
3 cups chopped cooked chicken
1 1/2 cups Bisquick baking mix
1/2 cup grated sharp Cheddar cheese
1/2 cup milk

Preheat oven to 350°F. Lightly grease a 13x9x2-inch baking dish.
In a large bowl, combine soup, and next 6 ingredients. Stir in vegetables and chicken. Spoon mixture into prepared baking dish; set aside.
In a small bowl, combine baking mix and cheese. Add milk, stirring just until dry ingredients are moistened. Drop biscuits by heaping tablespoonfuls evenly over chicken mixture. Bake 35 to 40 minutes, or until biscuits are browned and pot pie is hot and bubbly.

QUICK AND EASY PEANUT BUTTER & FUDGE PIE FROM KEEBLERS

This recipe is a recipe from a Keebler's magazine ad that I cut out several years ago.  It is a great make-ahead dessert since he has to freeze overnight but only takes a few minutes to make.

EASY APPLE TART

2 1/2 lbs Granny Smith apples, peeled & thinly sliced
2 tbsp lemon juice
1/4 cup granulated sugar
1/3 cup packed light brown sugar
1/2 cup all-purpose flour
1/2 tsp ground cinnamon
1/4 cup butter, softened
1 9-inch pie crust, unbaked
1 egg white
1 tbsp water

Preheat oven to 400 degrees.
In a large bowl combine the apples, lemon juice, and granulated sugar; set aside.

In mixer bowl, combine the brown sugar, flour, cinnamon, and butter; mix on low until crumbly; set aside.

Roll pie crust out to a 13-inch circle and transfer to a baking sheet - a solid pizza pan works great - okay for pastry to hang over the edge.

Mound the apples into the center of the pastry leaving a 2-inch border of dough all the way around.  Sprinkle the cinnamon mixture over the apples.  Fold the edges of the pastry up over apples, pleating as needed to snugly surround apples.  Pastry will not totally cover apples!  Gently press the pastry onto the apples to shape.  Combine the egg white and water; brush lightly over the crust.  Sprinkle very lightly with additional granulated sugar if desired.

Bake at 400 degrees about 30 minutes until the crust is lightly browned and the apples are tender to a fork.  Remove from oven and cool on baking sheet atop a wire rack.  Do not attempt to cut for 10 to 15 minutes.

Best served warm.

SAMANATHA'S EASY CHERRY CRUMB PIE

My 7-year-old granddaughter Samantha is quite a little baker.  Baking is her passion.  When she read a library book about a cherry pie, she wanted to make one.  So we took the idea for a crumb top and came up with her own cherry pie.  You know if it is easy enough for a 7-year-old to make (grandma handled putting it in and taking it out of the oven!), you can make it, too.  It really is good. This is a repeat post. Samantha is now in her third year of college, but we still use her recipe. She has made many cherry and apple pies over the years using this topping, especially for holidays and church functions.

1 pkg (15-oz) refrigerated pie crusts
1 can (20-oz) cherry pie filling
1 1/4 cup raw quick oats
1 cup packed brown sugar
3/4 cup all-purpose flour
1 tsp ground cinnamon
1 1/2 sticks butter, cut up

Preheat oven to 375 degrees.

Arrange one sheet of the refrigerated pie crusts in a 10-inch pie plate.  Refrigerate other crust for another use.
Spread the cherry pie filling evenly in the pie crust. 
In a medium mixing bowl combine the oats, brown sugar, flour, and cinnamon until well combined.  Add the pieces of butter and using a pastry blender or two knives cut in the butter.  Use fingers to blend if needed.  Sprinkle the crumbs evenly over the pie filling.

Place pie in oven and bake at 375 degrees for approximately 30 to 35 minutes.  Use a pie shield to protect crust if it starts to get too brown.
Allow to cool before cutting.
Yield: 8 to 10 servings

TOMATO PIZZA PIE

 Tomato Pizza Pie

A deep dish pizza, made with fresh tomatoes and basil, topped with mozzarella cheese.
Serves: 8 slices
Ingredients
  • 1 12" pie crust (I used Pillsbury)
  • 3 medium tomatoes, sliced
  • 6 plum tomatoes, sliced
  • 10 basil leaves, sliced, divided
  • ½ tsp. oregano, divided
  • 2 cups spinach, fresh, torn
  • 2 cups pasta sauce or pizza sauce Save Now
  • 1 cup mozzarella cheese, lite shredded
Instructions
  1. Preheat oven to 450 degrees
  2. Line the pie plate with your pie crust. Add one layer of tomatoes, sprinkle with ¼ tsp oregano, 5 basil leaves, 2 cups of spinach.
  3. Create second layer by adding remaining tomatoes, sprinkle with oregano, and remaining basil leaves.
  4. Pour pasta sauce over the tomatoes and evenly spread with the back of a spoon. Top with mozzarella cheese.
  5. Bake in oven for 20 - 25 minutes or until cheese is melted and crust is lightly golden.

SUMMER DREAM STRAWBERRY PIE

Note: This pie goes together quickly but it does need to chill for at least an hour before being cut to serve.

1 (9-inch) Graham cracker pie shell
1 tbsp room temperature water
1 pkg unsweetened strawberry drink mix (ie Kool-Aid)
1 tbsp strawberry ice cream topping
3 pkgs (3-oz each) cream cheese, softened to room temperature
1 cup powdered sugar
1 tsp vanilla extract
1 1/2 cups whipping cream, whipped
2 tbsp hot fudge, warmed for drizzle
fresh strawberries for garnish, if desired

Combine the water and strawberry drink mix in a small bowl until dissolved completely.  Stir in the ice cream topping.

In a large mixing bowl, beat both cream cheese blocks powdered sugar,vanilla, and the strawberry mixture together until fluffy.  Gently fold in the whipped cream.  Spread the filling into the Graham cracker crust and chill for at least an hour or until set.

To serve, cut pie into 6 to 8 wedges.  Place pie wedge on plate and drizzle with the hot fudge and garnish with a strawberry if desired.

MINIATURE APPLE PIES

3/4 cup - 1 tablespoon all-purpose flour
1 tablespoon whole-wheat flour
1/4 cup butter
1 tablespoon granulated sugar
1 teaspoon baking powder
1 egg
2 tablespoons milk

Preheat oven to 425 degrees. 

Place the flours in a large mixing bowl and cut in the butter using a pastry cutter or two knives until mixture forms coarse crumbs.  Stir in the sugar and baking powder.

In a small bowl combine the egg and the milk, mixing together well.  Add this mixture to the flour mixture and stir until a dough forms.  Cover with a clean tea towel and set aside.

1 large Granny Smith apple
1 teaspoon ground cinnamon
dash of ground ginger
1 egg, lightly beaten
1 1/2 tablespoons granulated sugar

Peel and core the apple and grate into a small bowl.  Stir in the cinnamon and ginger; set aside.

On a lightly floured surface, roll out the dough into a 16 X 8-inch rectangle.  Cut the dough into 8 4-inch squares.

To make the pies, place approximately 1 tablespoon of the apple mixture in the center of each dough square.  Brush edges of dough with the egg.  Fold the corners of the dough up over the filling and pinch together to seal.  Place on an ungreased baking sheet that has sides.  Brush the remaining egg over the tops of the pies and sprinkle with the sugar. 

Bake pies until lightly browned, approximately 8 to 10 minutes.  Allow to cool on baking sheet for 1 to 2 minutes.  If not serving immediately, allow to cool on a wire rack.

In a hurry?  Use this same dough and fill pies with prepared canned pie filling.  Hint:  Great for little cherry pies, too.

OH-SO-EASY KEY LIME PIE


4 large egg yolks (save whites for meringue, if desired)
1 can (14-oz) sweetened condensed milk
3 1/2 ounces Key Lime juice
1 9-inch graham cracker pie crust or pie pastry baked just until lightly browned

In a mixing bowl combine the egg yolks with the sweetened condensed milk on low speed of electric mixer. Slowly pour in the lime juice, mixing until well blended. Pour mixture into the pie shell. Bake at 350 degrees for about 15 minutes until set. Use the egg whites to make a meringue topping or top with whipped cream.

KEY LIME PIE

This is another "quick fix" recipe that does, however, require some chilling time.

This is a really easy pie. The photo is a file photo of this pie.

1 baked pastry shell or graham cracker crust
3 egg yolks
1 can (14-oz) sweetened condensed milk
1/2 cup Lime Juice from concentrate (such as ReaLime)
Yellow food coloring, optional
Whipped cream for garnish

Preheat oven to 325 degrees.

In a large mixer bowl, beat egg yolks with the sweetened condensed milk, lime juice, and the food coloring, if desired. Pour the mixture into the prepared pie crust and bake for 30 minutes. Cool. Refrigerate until chilled. Top with whipped cream garnish before serving.

DREAMY PRALINE PIE

This recipe goes together quickly which is why I have posted it here. It does, however, need to chill for about 4 hours before serving.

1/2 cup chopped pecans
1/3 cup butter
1/3 cup firmly packed light brown sugar
1 ready-made graham cracker pie crust

2 envelopes whip topping mix
2 3/4 cups cold milk, divided

1 tsp vanilla extract
2 pkgs (4-serving size each) Vanilla Flavor Instant Pudding and Pie Filling Mix

In a small saucepan, heat the nuts, butter, and brown sugar together until the butter and sugar are melted and the mixture comes to a boil. Boil for 30 seconds. Spread the mixture over the bottom of the prepared pie shell and allow to cool.

In a large mixing bowl, beat the whipped topping mix with 1 cup of the milk and the vanilla extract with electric mixer on high speed. Beat for about 6 minutes or until the topping becomes thick and forms soft peaks. Add the remaining 1 3/4 cups of milk along with the pudding mix; blending on low speed. When combined, beat on high speed for 2 minutes, scraping bowl down occasionally.

Spoon the filling into the crust atop the praline layer. Refrigerate for at least four hours or until serving time. Before serving, add a dollop of whipped cream and/or a pecan half to each wedge for garnish.

WORTH A MILLION PIES

This pie needs to chill after being prepared. But it goes together very easily and quickly. This is a great "no-cook" pie!

1 can (14-oz) sweetened condensed milk
1 cup drained crushed pineapple
1 cup coconut
1 cup chopped pecans
1/4 cup lemon juice
1 large carton frozen whipped topping, thawed
2 9-inch pie shells that have been baked and cooled

In a large bowl combine the milk, crushed pineapple, coconut, chopped pecans, and lemon juice together. Gently stir in the whipped topping. Divide the mixture evenly between the two baked pie shells. Chill before serving.

QUICK AND EASY CHICKEN POT PIE

1 pkg (15-oz) refrigerated pie crust

1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 1/2 cups chicken broth
2/3 cup milk
2 -3 cups shredded or chopped cooked chicken*
2 cups frozen mixed vegetables, thawed

Preheat oven to 425 degrees.

Line a deep-dish 9-inch pie pan with a sheet of the pie crust; set aside.

Melt the butter in a medium saucepan over medium heat.  Add the onion and cook a couple minutes until tender.  Add the flour, salt, and pepper; stir until well blended.  Gradually stir in the broth and milk, cooking while stirring until bubbly and thickened.

Add the chicken and mixed vegetables; mix well.  Remove the pan from the heat.  Spoon the mixture into the crust lined pie pan.  Top with the second crust, seal edges tightly and flute as desired.  Cut slits for steam escape in the top crust.

Bake for 30 to 40 minutes at 425 degrees until the crust is golden brown.  If edges start to get too brown, cover edge with foil strips.

Let stand 5 minutes before cutting to serve.
Yield: 6 servings

NO BAKE LEMON PIE

This is one quick to make pie but it does need a couple of hours to chill before serving!

Ingredients
1 Pie Crust
2 cans (14 oz.) sweetened condensed milk
3/4 cup lemon juice
Directions
Pour two cans of sweetened condensed milk into a mixing bowl
Add Lemon Juice and Stir
Pour into the Pie Crust and refrigerate for a couple hours
Whipped cream for garnish

STRAWBERRY ICE CREAM PARFAIT PIE

1 baked pastry crust or graham cracker crust

1 pkg (4-serving size) strawberry gelatin
1 1/4 cup boiling water
1 pint vanilla ice cream
1 cup strawberries, halved or sliced
Whipped cream for garnish, if desired
Whole strawberries for garnish, if desired.

Mix the gelatin and boiling water. Spoon in the ice cream, stirring until melted. Place in the refrigerator until thickened but not set (15 to 20 minutes). Remove from the refrigerator and stir in the strawberries. Pour mixture into the pastry shell or graham cracker crust. Before serving pipe a decorative border of whipped cream around the outer edge of the pie. Top whipped cream with whole strawberries, if desired.

CARAMEL COFFEE NUT TART

This tart is quick to assemble but does need to refrigerate for about an hour before serving.

1/2 cup whipping cream
2 tbsp instant coffee granules
1 pkg (14-oz) caramels, unwrapped
4 cups toasted pecans
1/4 tsp cinnamon
1 9-inch prepared graham cracker crust

In a large microwavable bowl, stir together the cream and coffee granules; add caramels. Microwave mixture on high 2 to 3 minutes, stirring every minute. Cook and stir until caramels are completely melted. Stir in pecans and cinnamon. Spoon mixture into the prepared crust. Refrigerate for about an hour or until firm. Drizzle with melted chocolate or chocolate ice cream topping, if desired, before serving.

FROZEN PEANUT BUTTER PIE

This pie is in the Quick Fix Recipes because it only takes 10 minutes to prepare. It does, however, need to be frozen before serving.

8-oz cream cheese, softened
3/4 cup extra chunky peanut butter
1 cup powdered sugar
1/2 cup milk
8-oz carton extra creamy frozen whipped topping, thawed
9-inch graham cracker crust
Melted chocolate for garnish, optional
Chopped peanuts for garnish, optional

In a medium mixing bowl using an electric mixer, beat cream cheese on low speed until soft and fluffy. Mix in peanut butter and sugar until incorporated. Slowly add milk, beating until well blended. Fold in thawed whipped topping. Spoon mixture into the graham cracker crust mounding in center. Freeze until firm. When solid enough, cover with foil.

Note: This pie will keep in the freezer for several weeks.

APPLE & TURKEY POTPIE


1/4 cup chopped yellow onion
1 tbsp butter
1 can (10 3/4-oz) condensed cream of chicken soup
1 can (10 3/4-oz) condensed cream of celery soup
3 cups cubed cooked turkey*
1 large Granny Smith apple, peeled & cubed
1/3 cup raisins, optional
1 tsp lemon juice
1/4 tsp ground nutmeg
Pastry for a single-crust pie

Preheat oven to 425 degrees.

In a large saucepan, melt butter over medium heat; add the onion and saute until tender. Add the soups, turkey, apple, raisins - if using, lemon juice, and nutmeg; mix together well. Spoon the mixture into an 11 x 7 x 2-inch baking dish.

On a floured surface, roll out the pastry dough to fit the baking dish. Cut slits or a design in the pastry. Place the pastry over the turkey mixture and flute the edges using the tines of a fork.

Bake the potpie at 425 degrees for about half an hour or until the crust is a golden brown and the filling is bubbly.

Yield: 6 servings
*May substitute chicken.

LEMON DREAM PIE

This recipe goes together in about 10 minutes but needs to chill for about an hour.

1 tbsp water
1 pkg lemonade unsweetened Kool-Ade style drink mix
1 tbsp frozen lemonade concentrate, thawed
2 pkgs (3-oz each)cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 1/2 cups heavy whipping cream, whipped
1 Graham cracker pie crust
2 tbsps seedless raspberry jam, warmed; optional garnish
thin lemon slices, optional garnish

In a small mixing bowl, combine the water and the lemonade soft drink mix until the mix is totally dissolved. Stir in the lemonade concentrate. Set aside.

In a large bowl, beat the cream cheese, powdered sugar, vanilla, and the soft drink mixture until fluffy. Fold in the whipped cream. Spread the mixture into the Graham cracker crust. Chill for at least an hour until set before cutting. If desired, use the raspberry jam to drizzle on the serving plates before placing the pieces of pie on the plates. Top each slice with a thinly sliced lemon slice that has been slit to twist into a decorative design and add a couple of mint leaves if desired.

10 MINUTE CREAMY PUMPKIN PIE

This pie goes together in about 10 minutes. It will need to refrigerate for about 2 hours.

1/2 cup cold milk
1 pkg (6 serving size) vanilla instant pudding & pie filling mix
1 tsp pumpkin pie spice*
1 cup canned pumpkin (not pumpkin pie mix)
2 1/2 cups frozen whipped topping, thawed
1 Graham cracker pie crust

In a large bowl, beat the milk, pudding mix and spice together with a wire whisk for 1 minute or until very thick. Whisk the pumpkin into the mixture. Gently stir in the whipped topping. Spread the mixture into the pie crust and refrigerate until set, about 2 hours. Serve topped with whipped cream sprinkled with cinnamon.

*If you do not have pumpkin pie spice, use 1/2 tsp ground cinnamon, 1/4 tsp ground ginger and 1/8 tsp ground cloves.
