APPLE COLE SLAW

 3 cups chopped cabbage

1 red apple, cored, chopped

1 Granny Smith apple, cored, chopped

1/2 cup shredded carrot

1/2 cup finely chopped red bell pepper

2 finely chopped green onions

1/3 cup loosely packed brown sugar

1/3 cup olive oil mayonnaise

1 tbsp lemon juice

Combine the first 6 ingredients in a large bowl.

In a small bowl whisk together the brown sugar, mayo, and lemon juice; pour over the cabbage/apple mixture and toss to combine. Cover and refrigerate until serving time. May be refrigerated up to 24 hours before serving.
