ROASTED ACORN SQUASH WEDGES
1 acorn squash, halved, seeded, cut into 1/2-inch thick wedges
olive oilsaltpepperPreheat oven to 425 degrees.Toss the squash wedges with some olive oil; sprinkle with salt and pepper to taste.Spread on a baking sheet and roast at 425 degrees 15 to 20 minutes until tender. Stir halfway through cooking time.file photo
