HOT SPINACH-ARTICHOKE DIP


1 pkg (10-oz) frozen chopped spinach, thawed

2 cans (14-oz each) artichoke hearts, drained

1/2 cup mayonnaise

1/2 cup sour cream

1 cup grated Parmesan cheese

1 cup grated pepper Jack cheese

Assorted veggie sticks and/or chips, or crackers for serving

Preheat oven to 350 degrees.

In a microwave-safe dish, microwave the spinach 5 minutes, cool. Squeeze dry. Place artichokes in a food processor and pulse until coarsely chopped.

Spray a 1-quart casserole dish with olive oil cooking spray.

In a large bowl, stir the spinach, artichokes, mayonnaise, sour cream and Parmesan cheese until combined. Transfer to the casserole dish; sprinkle the Jack cheese over the top.

Bake at 350 for 30 minutes. 

Serve warm with the veggies and/or chips or crackers.
