2 tbsp cider vinegar
1/4 tsp salt, optional
1 cup unpeeled, diced apple
1/4 cup raisins
2 cups torn fresh spinach
2 cups torn romaine lettuce
2 tbsp canola or olive oil
1/4 tsp sugar
1/4 cup chopped red onion
Wash spinach and lettuce, allow to dry.
In a small bowl, combine vinegar, oil, salt (if using), and sugar, mix well. Add the apple, raisins, and onion, toss to coat well. Cover and allow to stand 10 minutes. Just before serving time, combine the spinach and lettuce in a large salad bowl. Add the dressing and toss. The salad photo below is for reference only.
