1 1/2 lbs fresh broccoli
1 can cream of mushroom soup
1/4 cup mayonnaise
1/4 cup shredded sharp American cheese
1 tbsp chopped pimento
1 1/2 tsp lemon juice
1/3 cup crushed Ritz crackers
Cut up broccoli to make about 6 cups. In a saucepan, cook the broccoli in a small amount of lightly salted water for about 10 minutes or until fork tender. Drain the broccoli well.
Lightly spray a 1 1/2-quart casserole dish and place the broccoli in the dish.
In a small bowl, combine the soup, mushroom soup, mayonnaise, cheese, pimento and lemon juice. Pour mixture over the broccoli and sprinkle the crackers over the top.
Bake, uncovered, at 350 degrees for 35 minutes
Yield: 8 servings
