1 cup vegetable oil
6 cups diced apples
1/2 cup milk
1/4 cup lemon juice
2 eggs
2 tbsp sugar
1 tsp vanilla
1 cup all-purpose flour
2 tsp baking powder
1/4 tsp cinnamon
1/2 tsp salt
Add the oil to a skillet and heat over medium heat.
Puree diced apples, milk and lemon juice until smooth. Transfer to a large bowl and whisk in the eggs, sugar and vanilla. Fold in the flour, baking powder, cinnamon and salt. Divide mixture into 16 sections.
Knead sections into donut shapes and fry 8 minutes, flipping over halfway through cooking. Cool on a wire rack.
