PEANUT BUTTER CHEESE BALL

1 brick (8-oz) cream cheese, softened

1 1/2 cups peanut butter

1/2 cup powdered sugar

1 tsp vanilla extract

3/4 cup chopped peanuts

Apple slices for serving

In a small mixing bowl, beat cream cheese until light. Add the peanut butter, powdered sugar and vanilla extract; beat until smooth. Shape mixture into a soft ball and roll in the peanuts. Wrap in plastic wrap and refrigerate until serving time. Serve with the sliced apples.

Yield: 2 1/2 cups
