HERBED RICE

4 cups rice, cooked according to package directions (without butter)

2 tbsp salted butter
2 tbsp chopped fresh flat-leaf parsley
2 tbsp chopped fresh chives
2 tsp chopped fresh thyme leaves
1 tsp salt
1/2 tsp black pepper

Combine all ingredients in a large bowl and toss to combine.

Yield: 6 servings

Note: If you are a diabetic, I suggest you never use white rice but instead use brown rice. Brown rice is a whole grain, white rice is a refined grain.
