STIR-FRIED OKRA

1 medium-size sweet onion, chopped
1 tsp mustard seeds
1/2 tsp ground cumin
1/4 tsp dried crushed red pepper
2 tbsp canola oil
1 pkg (16-oz) frozen okra, thawed*
3/4 tsp salt

Heat oil in a large skillet over medium-high heat; add onion, mustard seeds, cumin, and red pepper. Sauté mixture for 5 minutes or until onion is tender.

Add the okra to the skillet and sauté 15 minutes or until okra is lightly browned; stir in the salt.

*May use 1 lb fresh okra.
