1/2 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1 cup all-purpose flour (I recommend white whole wheat flour)
1/4 tsp baking soda
10 strips of bacon, cooked and crumbled
2 cups cornflakes
1/2 cup raisins
Preheat oven to 350 degrees.
In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg.
Combine the flour and baking soda; gradually add to the butter mixture. Stir in the bacon, cornflakes and raisins.
Drop batter by rounded tablespoonfuls or use a small cookie dipper 2-inches apart on ungreased cookie sheets (I line with parchment paper). Bake at 350 15-20 minutes until lightly browned. Cool on baking sheets 2 minutes then remove to wire racks to cool.
Store cookies in the refrigerator.
Yield: 2 dozen
Per serving of 2 cookies: 225 calories, 11 g fat (6 g sat), 43 mg cholesterol, 228 mg sodium, 29 g carbs, (17g sugar, 1 g fiber) 4 g protein
