SKILLET LEMON THYME GREEN BEANS

 2 lb fresh green beans, trimmed

2 tbsp butter 

2 tbsp fresh lemon juice

1 tbsp finely-grated lemon zest

1 tbsp finely chopped thyme or 2 1/2 tsp dried thyme

Salt and pepper to taste

Place beans in a large skillet with 1/2-inch water. Bring beans to a rapid simmer, cover, and steam 5 to7 minutes or until crisp tender. Drain and return to the pan. Add butter, juice, zest and  thyme; toss to coat. Season with salt and pepper.
