Dressing:
3 tbsp olive oil
1 tbsp red wine vinegar
1/2 tsp salt
1/2 tsp freshly ground black pepper
Salad:
1 1/4 lbs tomatoes, sliced
4 oz mozzarella cheese, diced
1/4 cup chopped fresh basil
To make the dressing: In a bowl whisk the olive oil, red wine vinegar, salt and pepper together to mix well.
Arrange the sliced tomatoes on a serving platter. Sprinkle the mozzarella over the tomatoes, then sprinkle the basil overall. Drizzle the dressing over the salad.
Yield: 4 servings
