1 tbsp canola oil
1 small yellow onion, chopped
1 1/2 lb coarsely chopped cabbage
1/4 cup cider vinegar
3 tbsp sugar
1/4 tsp salt
1 large Granny Smith apple, cored and chopped
In a large skillet, heat the oil over medium-high heat. Add the onion and sauté a couple of minutes or until transparent. Add the cabbage and sauté 3 to 5 minutes until cabbage is just tender. Add the vinegar, sugar, salt, and apple. Sauté another minute or two and serve while hot.
