CRUNCHY CHICKEN-PEANUT CHOPPED SALAD

1 lb deli-fried chicken tenders, chopped

3 cups shredded coleslaw mix

2 cups shredded red cabbage

1/2 cup thinly sliced scallions

1/2 cup coarsely chopped fresh cilantro

3/4 cup dry roasted peanuts, chopped and divided

5 tbsp fresh lime juice, approximately 3 limes

3 tbsp creamy peanut butter

3 tbsp toasted sesame oil

2 tbsp soy sauce

2 tbsp seasoned rice vinegar

2 tbsp light brown sugar

Crushed red pepper to taste

In a large bowl, toss together the chicken, coleslaw mix, cabbage, scallions, cilantro and 1/2 cup of the chopped peanuts.

In a small bowl whisk together the lime juice and peanut butter until smooth. Slowly whisk in sesame oil, soy sauce, vinegar, sugar and red pepper, whisking until creamy.

To serve, pour dressing over salad mixture and toss to coat all ingredients. Sprinkle the remaining chopped peanuts overall.

This is basically an old recipe and photo from SL.
