8-oz fettuccine pasta
3 tbsp olive oil
2 celery ribs, chopped
2 carrots, chopped
1 can (10.5-oz) condensed cream of celery soup
1 cup frozen corn, thawed
1 garlic clove, minced
1 can (12-oz) tuna, drained
2 cups shredded cheddar cheese
1/2 cup Italian-style dry breadcrumbs
In a large pot of salted boiling water, cook pasta according to package directions for al dente; drain. Toss with 1 tablespoon of the oil.
Heat oven to 350-degrees.
In a skillet, heat 1 tablespoon of the oil over medium heat. Add celery and carrots, cook, stirring, 10-12 minutes. Add the soup, corn, garlic, 1/4 teaspoon pepper and 2 cups water; bring to a boil. Add pasta, tuna and 1 cup of the cheese; toss until coated. Transfer to a baking dish that has been sprayed with cooking spray. In a bowl, mix breadcrumbs with the remaining tablespoon of oil and sprinkle over the pasta. Top with the remaining cheese and bake for 25 minutes.
