1 medium to large red onion
1/2 cup distilled white vinegar
1 cup water
1 tsp sugar
pinch of salt

In a saucepan, combine all ingredients; bring to a boil and simmer for 1 minute.

Pour onion and juices into a heatproof bowl or jar and cover. Refrigerate until ready to use.
