1/2 cup olive or canola oil
2 tbsp white wine vinegar
2 tbsp orange juice
1 tbsp apricot juice
1/2 tsp salt
1/2 tsp coriander
1/2 tsp freshly ground black pepper

Combine all ingredients in a jar with a tight-fitting lid and shake well to combine. Serve over your favorite green salad.
