1 clove garlic
1 tsp kosher salt
2/3 cup buttermilk
1 tbsp + 1 tsp finely chopped fresh tarragon
1 tbsp + 1 tsp sweetened flaked coconut
2 tbsp fresh lime juice
1 tbsp extra virgin olive oil
1/2 tsp freshly ground black pepper
Peel garlic clove and place on a cutting board along with the salt. Using the flat side of a knife, smash the garlic and salt together to make a paste.
Whisk together the garlic/salt paste, buttermilk, tarragon, coconut, lime juice, olive oil, and pepper until blended.
Cover dressing and refrigerate until ready to use.
Yield: Approximately 1 cup
