CARROT AMBROSIA

1 lb carrots, shredded
1 can (20-oz) crushed pineapple in its own juice
3/4 cup golden raisins
3/4 cup flaked coconut
3/4 cup miniature marshmallows
1 cup sour cream
2 tbsp honey

Combine the carrots, pineapple, raisins, coconut and marshmallows in a salad bowl; mix together well.  Add the sour cream and honey, mixing gently.  Refrigerate until time to serve. 

Yield: approximately 12 servings.
